So, I was thinking of what other food I grew up with. Nostalgia hit! I literally said “WOW, how could I forget?!” This dish is definitely up there in terms of comfort food. My mom would make this for holidays sometimes and definitely for all my birthdays as a child since it was one of my favorite dishes!
Ensalada Fria, which translates to Cold Salad. It was a pasta, potato, and hard boiled egg salad. Usually I’ll see either a pasta salad OR a potato salad OR egg salad, but she would mix the three and add more yummy ingredients. She would make a huge batch and store it in a big aluminum tray. I would eat this pretty much for breakfast, lunch, and dinner everyday until it would run out. Ok, I’ll admit it, even as a snack in between regular meals if my mom wouldn’t let me have it as my main dish. HA!
I know, I know, a bit excessive. But I had no control when it came to eating this. It was my weakness!
Ingredients:
1 Box of elbow pasta
2 Russet potatoes diced
1/2 cup relish
3/4 cup peas
3 cups diced ham
5 hard boiled eggs diced
1/2 cup roasted red pepper diced
Mayo
Paprika
Bring two pots of water to a boil with some salt. Add the pasta to one pot and the potatoes in the other.
Once cooked, combine in a large container along with all the other ingredients. Add some paprika and enough mayo to get a creamy consistency. I know, I know… I’m being a bit excessive again, but lets face it, mayo just adds a certain undeniable creaminess. Although, I think I just gained a few LBs just thinking about it!
You can store it in the fridge for a few days, if it lasts that long! 😉
